Thanks for starting this conversation. Your ribeye method sounds excellent. I usually choose sirloin because it keeps a nice balance between tenderness and hearty flavor while still feeling fairly lean.

My seasoning is simple: salt, cracked black pepper, garlic powder, and a light touch of smoked paprika. I like to let the steak sit on the counter for a short time before cooking so the center is not too cold, which helps it cook more evenly. For cle
ar grill marks, I begin with hotter grates, give each side a couple of minutes without moving it, then lower the heat to finish until it reaches the level I prefer.

If anyone has suggestions for bringing out deeper roasted notes or layering in more subtle flavor, I would love to try them.

bit of chopped rosemary or thyme.

One habit that has helped me is letting the steak rest after cooking. I tent it lightly with foil for several minutes so the juices settle before slicing, which keeps each bite moist. For a gentle smoky character on the grill, I add a handful of soak
ed apple or cherry wood chips to the heat source. It gives a pleasant aroma without taking over the natural taste of the meat.
