Hope you're having a good week. I'm putting together options for next Thursday's team lunch and wanted to gather some ideas. The weather is supposed to be pleasant, so perhaps we could consider something that feels a bit like a picnic, even if we're
indoors.<br>

I was thinking about a build-your-own sandwich bar. We could get a variety of breads – maybe some ciabatta rolls, whole grain slices, and even gluten-free options. For fillings, roasted turkey, ham, a couple of vegetarian choices like grilled veget
ables and hummus, along with all the usual toppings. It's usually a crowd-pleaser because people can customize.<br>

Another idea is a large, shared salad with different proteins on the side. Something like a kale and quinoa base with roasted sweet potatoes, chickpeas, avocado, and then separate bowls of grilled chicken, salmon, and tofu. With a couple of dressing

Or, if we want something warmer, a soup and bread station. A couple of different soups – a hearty lentil or minestrone and a lighter tomato basil. Served with fresh bread and butter.<br>

On a separate note, has anyone tried that new recipe for lemon bars that was circulating last month I attempted it over the weekend and found the shortbread crust needed a few more minutes of baking than the instructions said. The filling was quite g
ood, though. I added a tiny bit more lemon zest than called for, which gave it a nice bright flavor. My family enjoyed them. I'm always on the lookout for reliable dessert recipes that travel well, for potlucks and such.<br>

Back to the lunch planning – we should also decide on drinks. Iced tea, lemonade, and water are standard. Does anyone have a preference for a particular type of iced tea The herbal peach blend was popular last time.<br>
