I cook a full breakfast almost every morning. Breakfast is my cherished meal of the day, providing energy well into lunchtime. Occasionally, my breakfast is so hearty that I am not really hungry when it comes time for lunch.
I often peel, chop, and parboil potatoes in the evening, preparing a batch that will last several days. This way, I can quickly start cooking home fries in the morning while prepping other items. Breakfast comes together fairly quickly anyw
ay, so besides scrambling eggs and chopping veggies, there's not much left to do.

Every weekend we have our 5-year-old grandchild visit. The rest of the week, it’s just my husband and me, as our children are grown and have moved out. I tend to cook a full breakfast on most Saturdays and every Sunday. Occasionally, my c
hildren drop by. It feels great to cook for a larger group again, as I did daily when my three children lived at home. Sitting around the kitchen table with the kids makes me feel youthful again.
